Tiropitakia
Cheese pie
Ingredients
  • 8 sheets of filo pastry
  • 170g of crumbled feta cheese
  • 50g of Gouda or ricotta cheese
  • 50g parmesan or keflograveria or regato
  • 1 egg beaten
  • Splash of milk
  • Fresh mint or dill chopped
  • Ground pepper
  • 50g of melted butter
Steps
  1. 1. Crumple feta cheese
  2. 2. Grate kefalograveria or permesan
  3. 3. Add ricotta or Gouda cheese
  4. 4. Hand beat egg and pour into cheeses
  5. 5. Add splash of milk
  6. 6. Add pepper to taste and mix well
  7. 7. Add cut mint into mixture
  8. 8. Spread 1 filo on bench and with brush drizzle butter. Spread one more and drizzle with melted butter.
  9. 9. Cut sheets into 3 lanes
  10. 10. Add 1 tsp of mixture in lane and fold corner to create a triangle. Continue folding triangle all filo lane.
  11. 11. Oil a baking tray and place pita
  12. 12. Brush top of tiropitakia with melted butter
  13. 13. Place in hot oven at 180 celsius fan forced and cook for about 25 to 30 minutes or until golden brown
