Kalamata Chicken (slow cooker)

Ingredients
  • 2 ribs celery, sliced
  • 4 chicken breasts
  • salt and pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 heirloom tomatoes, chopped
  • 6 garlic cloves
  • 1 cup pitted kalamata olives
  • zest and juice of 2 lemons
  • ¼ cup of feta cheese, crumbled
  • side salad (side)
  • almonds (side)
Steps
  1. Place the celery in the slow cooker and place the chicken on top in one layer.
  2. Sprinkle with salt, pepper, oregano and basil.
  3. Add the tomatoes, garlic, kalamatas, and lemon zest and pour the lemon juice over all.
  4. Cover and cook on LOW for 6 to 7 hours.
  5. Top with feta just before serving.
