White Beans with Buttermilk Recipe by Abra Berens
Ingredients
  • Extra-virgin olive oil (or unsalted butter)
  • 5 sprigs thyme
  • 1 yellow onion, sliced thinly

  • ½ pound dried white beans (such as cannellini, gigante, or great northern)
  • 2 teaspoons kosher salt, plus more to taste
  • 2 cups buttermilk
  • 1 bunch (10 leaves) hearty greens (such as kale, chard, or rapini), cut into ribbons
  • ¼ teaspoon chile flakes (optional)
  • ½ cup white wine
  • 4 large eggs
  • Freshly ground black pepper
