Chow Chow Green Tomato Relish
Ingredients
  • 5 cups green tomatoes (coarsely chopped)
  • 5 cups cabbage (coarsely chopped)
  • 1 ½ cups yellow onion (or sweet onion, finely chopped)
  • 2 cups bell pepper (coarsely chopped; at least 1 red bell pepper for color)
  • ⅓ cup pickling and canning salt
  • 2 ½ cups cider vinegar
  • 1 cup light brown sugar (packed)
  • 1 tablespoon yellow mustard seeds
  • 2 cloves garlic (finely minced)
  • 1 teaspoon celery seed
  • Optional: ½ teaspoon red pepper flakes (or to taste)
