Mexican Cornbread Casserole

Ingredients
  • Diced potatoes
  • Mexican cheese
  • 1.5 lbs ground beef (browned)
  • Diced onion ( small)
  • Mexican Cornbread mix
  • Velvetta cheese
  • JalapeƱos
  • Salsa
Steps
  1. Bottom layer of the casserole is boiled potatoes( we used diced)
  2. Next is thin layer of cheese.
  3. I used the bagged shredded   Mexican cheese. It had 3 different cheese mixed.
  4. Third layer is ground beef cooked with finely chopped onion.
  5. Fourth layer is the Mexican cheese again. On this layer you also add some Velveta, I just cut some in half inch cubes and scattered them around.
  6. And finally the top layer,,,, the Mexican Cornbread mix( mix in a bowl per instructions).
  7. And if you want it a little spicier you can add some finely chopped  jalapenos to it.
