Scottish Tattie, Neep and Carrot Soup
Ingredients
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, crushed
  • 6 large carrots, chopped
  • 1 large turnip, chopped
  • 4 medium potatoes, chopped
  • a handful of fresh parsley, chopped
  • 3 pints/1.7 litres/7 cups vegetable stock (more if you think it needs it)
  • a good grinding of salt and black pepper
