Ingredients
  • 1 lb lean ground beef
  • 3 T low sodium soy sauce, divided
  • 1 ¼ c chopped green onions, divided
  • 1 T minced garlic, about 3 cloves
  • 2 T rice vinegar
  • 2 T honey
  • 2 T minced or finely grated fresh ginger
  • ¼ tsp red pepper flakes
  • 1 T sesame oil
  • Cucumbers, carrots, sesame seeds and rice, for serving

  • 1️⃣Pickle the carrots and/or cucumbers (optional but v good): Place the vegetables in a medium bowl. Stir together with 2 tablespoons rice vinegar, 2 tablespoons water, ½ teaspoon sugar and ½ teaspoon kosher salt. Let hang out while you make the rest of the recipe.
