Migliaccio Recipe (Italian Ricotta and Semolina Cake)
Ingredients
  • 1 cup ( 165 g) fine or medium semolina flour, plus more for the pan
  • ½ teaspoon kosher salt
  • 2 ½ cups whole milk
  • ¼ cup ( 57 g)  unsalted butter, plus more for greasing the pan
  • 1 cup ( 200 g)  granulated sugar
  • 4 large eggs
  • 1 ½ cups ( 350 g)  whole milk ricotta, well-drained (see recipe note)
  • 1 tablespoon freshly grated lemon zest, from 2 lemons
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
