Kousa Bil Liban Stuffed Lebanese Zucchini in Yogurt

Ingredients

  • ¼ cup/60g/2oz rice, soaked for 30 to 45 minutes (or overnight)
  • 1 onion, peeled and diced
  • 4 cloves garlic, peeled and diced
  • 1 lb ground beef
  • 1 Tbs dried parsley
  • 3 tsp 7 spice
  • 1.5 tsp salt
  • 4 (~1 lb) zucchini, chopped
  • 4 cups chicken broth
  • 3 cloves garlic, peeled
  • 1 Tbs dried mint
  • ½ teaspoon salt
  • 300g Greek yogurt
