Ingredients
  • 3 tablespoons ( 45 ml) extra-virgin oil or avocado oil
  • 1 pound beef sirloin, sliced into ¼-inch thin strips that are about 2-inches long
  • Kosher salt and freshly ground black pepper
  • 1 small red onion (6 ounces; 170 g), finely chopped
  • ½ green bell pepper (3 ounces; 85 g), finely chopped
  • 2 teaspoons garam masala
  • ½ tablespoon ( 15 g) freshly grated garlic or store-bought paste (see notes)
  • ½ tablespoon (15 g) freshly grated ginger or store-bought paste (see notes)
  • 1 tablespoon ( 15 ml) tomato paste
  • 4 medium plum or R oma tomatoes (12 ounces; 340 g), finely chopped
  • Small handful fresh cilantro, finely chopped, for garnish
  • Ugali or  white rice  for serving
