For maximum results on plan, it is suggested to use Reduced-Fat Butter, 1/3 Fat Cream Cheese, and Block or Shredded Cheese when stated to do so within suggestions of the recipe. Failure to do so may affect results on plan-but should not affect quality of recipe.

Ingredients
  • 3 Bell Peppers-Green Red Yellow or a combo as desired
  • 8 oz lean uncured breakfast sausage + 4 oz uncured turkey sausage
  • 2 Tbsp Taco Seasoning
  • 6 oz chive &onion ⅓ Fat cream cheese, softened
  • 1 can Rotel (or diced tomatoes)
Steps
  1. Preheat oven to 350 degrees.
  2. Cut the tops off all 3 peppers peppers. Discard the seeds and membranes.
  3. Boil a large pot of water over medium-high heat. Add the peppers and cook for 5 minutes or until slightly tender (no more than 8 minutes). Remove the peppers from the water and place the peppers upside down on a plate to drain the water. Set aside.
  4. Brown your sausage and crumble into fine texture. Drain grease and return to pan.
  5. Add the taco seasoning
  6. Add your can of Rotel ( do not drain juice) and stir.
  7. Add your cream cheese cubes and stir all together until melted and well blended.
  8. Stuff peppers evenly with sausage mixture. Cover baking dish with foil, and bake peppers for 30 minutes.
  9. Remove from oven and allow to cool.
  10. Enjoy!
