Ingredients
- 3 Bell Peppers-Green Red Yellow or a combo as desired
- 8 oz lean uncured breakfast sausage + 4 oz uncured turkey sausage
- 2 Tbsp Taco Seasoning
- 6 oz chive &onion ⅓ Fat cream cheese, softened
- 1 can Rotel (or diced tomatoes)
Steps
- Preheat oven to 350 degrees.
- Cut the tops off all 3 peppers peppers. Discard the seeds and membranes.
- Boil a large pot of water over medium-high heat. Add the peppers and cook for 5 minutes or until slightly tender (no more than 8 minutes). Remove the peppers from the water and place the peppers upside down on a plate to drain the water. Set aside.
- Brown your sausage and crumble into fine texture. Drain grease and return to pan.
- Add the taco seasoning
- Add your can of Rotel ( do not drain juice) and stir.
- Add your cream cheese cubes and stir all together until melted and well blended.
- Stuff peppers evenly with sausage mixture. Cover baking dish with foil, and bake peppers for 30 minutes.
- Remove from oven and allow to cool.
- Enjoy!
