Classic Apple Pie
Ingredients

  • 2½ cups (340 g) plain (all-purpose) flour
  • 3 tsp (12 g) granulated sugar
  • 1 tsp salt
  • 1 cup (224 g) unsalted butter, chilled and cut into pats
  • 1 egg, cold
  • 3 to 4½ tbsp (60 to 90 ml) milk, cold
  • subheading: Filling/Egg wash:
  • 1½ tbsp (28 g) unsalted butter
  • 7 to 8 (about 1.6 kg total) firm apples , such as Granny Smith, Braeburn or Gala, peeled, cored and cut into ½ cm (¼-inch) slices
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 2 tbsp + 1 tsp (21 g) cornflour (cornstarch)
  • 1 tsp ground cinnamon
  • ¼ tsp freshly grated nutmeg
  • ¼ tsp kosher salt
  • 2 tbsp + 1 tsp (20 g) rolled oats
  • 1 egg
  • 3 tsp (15 ml) milk or water, for an egg wash
  • Turbinado or granulated sugar, optional

  • Cooling / chilling time:  1 to 2 hours. (Note pastry can be made up to 2 days in advance)
