IP Keto Double Bacon Cheeseburger Soup (hold the pickles please)
Keto and Kid friendly this is a favorite of my family. Both hearty and filling it makes a great meal. Inspired by another recipe this one has been revamped for the Instant Pot or other electric pressure cookers.

Ingredients
  • 1 small onion, diced
  • 1 tbsp minced garlic
  • 3 tbsp. Butter
  • 2 tsp. Yellow Mustard
  • 1 tsp. Black Pepper
  • 1 tsp. Ground Red Pepper(optional and can be added afterward to taste)
  • 1 tsp. Cumin
  • 1 tsp. Chili Powder
  • 1lb 4 oz ground beef (browned)
  • 8 oz cream cheese
  • 1 cup Real Bacon Bits
  • 1 6oz can tomato paste
  • 5 cups beef broth(bone broth is best)
  • 2 cup Shredded Cheddar Cheese
  • 1 cup Heavy Cream
  • 2 to 3 avocados (for topping)
Steps
  1. Turn IP(instant pot) or any pressure cooker onto saute and wait for the inner pan to get hot.
  2. Put butter, onion, garlic, and spices into the IP and let saute until onions are translucent.
  3. Add ground beef and cream cheese in and stir until cream cheese is integrated with ground beef.
  4. Add bacon bits, tomato paste, and beef broth to IP. Place lid on instant pot and seal. Make sure the sensor is on sealing and using either manual or meat/stew setting cook for 15 min.
  5. Allow the IP to slow release for 5 min, then tap the release to allow bursts of steam out slowly for 5 min.
  6. You may then quick release. Follow safety precautions and open your IP then add cheddar cheese and heavy cream stirring to integrate fully.
  7. Serve with cubed avocados and cheddar cheese as a topping.
Notes
  • 10 -1 ΒΌ cup servings
  • You can freeze the first 9 ingredients together and skip step 1.
  • Prep Cooking time 5 to 10 min
  • IP Cooking time 40 min
  • Pressure Release time 13 min
  • Total Cook Time - 1:15hrs (I like to put everything in and integrate the beef, spices, veggie, and cream cheese in the morning then set the delay cooking time to start 35 min before I wish to start working on dinner in the evening.
