Gluten Free Chocolate Chip Cookies
Ingredients
  • note: IMPORTANT…When measuring out your flours, DO NOT scoop your measuring cup into a tub or bag. This will result in using more flour than called for. Instead, pour or spoon the flour into your measuring cup, and level off with flat side of a knife. If possible, measure your flours by weight for best accuracy.
  •  
  • ½ cup 1 Tbsp. white rice flour (2.9 oz.)
  • ½ cup brown rice flour (2.0 oz.)
  • ¼ cup corn starch (1.2 oz.)
  • ¼ cup potato starch (1.3 oz.)
  • ¾ tsp. xanthan gum
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 stick butter, melted and cooled
  • 1 tsp. vanilla
  • ­­1 egg 1 egg yolk
  • ½ cup 1 Tbsp. light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 and ½ cup semi-sweet chocolate chips
