Chicken kabobs
Ingredients
  • One pound chicken breasts tor thighs (better)
  • One Red Bell Pepper
  • One Green Bell Pepper
  • One sweet onion
  • Cherry tomatoes
  • What ever additional veggie you like (zucchini)
  • Bottle of Catalina Salad Dressing
  • Lemon Pepper seasoning
  • Any other favorite chicken seasoning
Steps
  1. Cut veggies in chunks.
  2. Cut chicken in 2 inch chunks
  3. Marinate chicken in refrigerator overnight with Catalina dressing, lemon pepper
  4. Place veggies in a bowl with a ΒΌ cup of water and microwave for 3 mins to soften them. Drain and rinse with cold water to stop the cooking.
  5. Thread chicken and veggies on the skewer. Place loaded skewers on skewer rack. Season with your favorite seasoning, if desired. I used Weber Kickin Chicken seasoning.
  6. Air fry at 350 for 10 mins, basting once with Catalina dressing. Flip and baste again, cook for 7 to 10 mins until chicken reaches 165 degrees.
