Sopa de Albondigas

Ingredients
  • 1 pound ground beef
  • ½ cup cooked white rice
  • ½ cup onion, diced
  • 1 egg, beaten
  • 6 cups water
  • 2 cubes beef bouillon
  • 2 potatoes, peeled and diced
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • ½ cup zucchini, diced
  • ½ cup fresh cilantro, chopped
Steps
  1. In a large bowl, combine meat rice onion and egg.
  2. Form into one inch meatballs; set aside.
  3. In a large soup pot over medium-high heat, bring water to a boil.
  4. Add meatballs and bouillon cubes; reduce heat and simmer for about 20 minutes.
  5. Add vegetables; simmer for about 30 more minutes, until vegetables are tender.
  6. Stir in cilantro.
