CRISPY COCONUT OVEN BAKED CAULIFLOWER TACOS

  1. CRISPY COCONUT OVEN BAKED CAULIFLOWER TACOS   With FRESH mango salsa and homemade vegan tartar sauce!
  2. subheading: For the crispy coconut cauliflower:
  3. -I small-medium floret of cauliflower
  4. subheading: Wet ingredients:
  5. -½ cup full fat coconut milk
  6. -juice from lime and zest to taste
  7. -a little maple syrup to taste
  8. subheading: Dry ingredients:
  9. -½ cup coconut flakes finely chopped
  10. -½ cup Panko breadcrumbs
  11. -½ cup cornmeal
  12. You cut the cauliflower thin and long, and dip it in the wet ingredients- then dip in the dry and put on a baking sheet with parchment paper or aluminum foil. Bake at 400 degrees for 30 mins flipping each side at 15 minutes.
  13. subheading: Mango salsa:
  14. -1 mango chopped
  15. -2 tbsp of finely chopped red pepper
  16. -2 tbsp of finely chopped purple onion
  17. -1 tbsp of chopped cilantro
  18. Tartar sauce-
  19. -½ cup cashews
  20. -at least 2 tsp dill
  21. -lime juice to taste
  22. -salt to taste
  23. -water until you reach desired thickness
  24. -three chopped pickles
  25. -2 tsp of pickle juice
  26. Blend until smooth and then remove from blender and add three finely chopped pickles and a little of the pickle juice to taste.
  27. Serve on tortillas (I did the bake it yourself white tortillas) so so yummy!!
