Roasted Garlic, Red Peppers and Caramelized Onion Hummus
Ingredients
  • 1 head of garlic or one heaping tablespoon of minced garlic
  • 3 tablespoons plus 1 teaspoon extra-virgin olive oil, divided
  • 1 large onion, thinly sliced
  • One 14-ounce can chickpeas, drained and rinsed (about 2 cups)
  • ½ cup plus 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice (from about ½ a lemon)
  • ¾ teaspoon salt, or to taste
  • 2 to 4 tablespoons water
  • ½ cup of roasted red peppers
