Whole Grain and Lentil Porridge
A porridge made from whole groats (oat, barley, rye, others) and black lentils, with raisins and cinnamon.

Ingredients
  • ½ cup oat groats
  • ½ cup rye berries
  • ½ barley groats or pearled barley
  • ½ cup black "Beluga" lentils
  • ½ cup of sorghum
  • 4 cups water
  • 2 cups plant milk (or 2 cups additional water)
  • ⅓ cup raisins (optional)
  • 1 stick of cinnamon (optional)
  •  
  • subheading: Some possible toppings:
  • ground cinnamon
  • ground flax
  • crumbled walnuts
  • fresh berries
  • sliced banana
Steps
  1. Combine grains, lentils, raisins, and cinnamon in Instant Pot. Stir to evenly distribute.
  2. Add milk and water. Stir to settle mixture below line of liquid.
  3. Seal the lid and press the "Porridge" button on the Instant Pot. Set the time to 30 minutes for an oatmeal-like consistency.
  4. Once the timer ends, leave Instant Pot sealed for 20 minutes or natural release.
  5. Serve with toppings of your choice.
Notes
  • This can be stored in a sealed container in the fridge for several days. To reheat, just put a serving in a microwave safe bowl, add 2 tbsp water, and heat for 2 minutes before adding toppings.
  • Can use all kinds of whole grains: buckwheat, millet, farro, or other. Be sure the liquid volume is about 2.5 times the dry volume.
