White Chili

Ingredients
  • 3 cans Northern Beans, drained and rinsed
  • 6 c. Chicken Broth
  • 2 Onions, chopped
  • 6 cloves Garlic
  • 4 oz or 7oz. can Diced Green Chilies
  • 1 t. Ground Cumin
  • 1 t. Dried Oregano
  • ½ to 1 t. Cayenne Pepper
  • 2 to 3 cans Chicken or half of a rotisserie chicken, shredded
  • 1 c. Sour Cream
  • 2 c. Mozzarella Cheese
Steps
  1. Combine beans, broth and chicken; simmer 1 hour.
  2. Sauté onions and garlic; add green chilies, cumin, oregano, cayenne and add to bean mixture. Simmer 30 minutes.
  3. Add sour cream and cheese prior to serving. Garnish with green onions (optional).
