Louisiana Butter Pecan Cake
Ingredients

  • 2-⅔ cups chopped pecans (divided in half for the cake; save half for the frosting)
  • 1-¼ cups butter, softened
  • ½ cup of vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon table salt
  • 1 cup milk
  • subheading: For the Frosting:
  • ½ stick butter, room temp.
  • 8 oz package of cream cheese, room temp.
  • 3 to 3.5 cups confectioners’ sugar
  • 2 tablespoons of sour cream
  • 2 teaspoons vanilla extract
  • 1.5 teaspoons of coarsely ground sea salt

  • note: Plus the remaining pecans that were toasted for the cake.
