Ingredients
- 1 kg white fleshed fish - trevally or rockling
- 1 egg
- 1 tbsn corriander
- 1 tbsn sugar
- 50g Red Curry Paste Thai Style
- 2 tso Fish sauce
- 100g green beans
- Salt and pepper
Steps
- 1. Roughly chop up fish
- 2. Roughly chop up corriander
- 3. Finely slice beans
- 4. Place fish, eggs, corriander, sugar, curry paste and fish sauce all together in a food processor and blend until smooth. Remove mix from processor and stir in cut beans and salt and pepper.
- 5. Divide mixture into 12 and form each portion into a round flat cake.
- 6. Heat frying pan and seal either side until golden. Remove from pan and place on an oven tray. Put fish cakes in s moderate oven 180 for approx. 10 mins or until cooked through.
