Red Curry Fish cakes

Ingredients
  • 1 kg white fleshed fish - trevally or rockling
  • 1 egg
  • 1 tbsn corriander
  • 1 tbsn sugar
  • 50g Red Curry Paste Thai Style
  • 2 tso Fish sauce
  • 100g green beans
  • Salt and pepper
Steps
  1. 1. Roughly chop up fish
  2. 2. Roughly chop up corriander
  3. 3. Finely slice beans
  4. 4. Place fish, eggs, corriander, sugar, curry paste and fish sauce all together in a food processor and blend until smooth. Remove mix from processor and stir in cut beans and salt and pepper.
  5. 5. Divide mixture into 12 and form each portion into a round flat cake.
  6. 6. Heat frying pan and seal either side until golden. Remove from pan and place on an oven tray. Put fish cakes in s moderate oven 180 for approx. 10 mins or until cooked through.
