Roasted Chicken with Apple Dressing Pomegranate Gastrique
Ingredients
  • 1 Pasture Raised Whole Chicken
  • 1 loaf (16 oz) Ciabatta or sourdough, cubed and dried (either day old or in a 250 degree oven for about 15 minutes, stirring occasionally)

  • Spinach, fresh 8 oz
  • 2 Apples, peeled and sliced
  • 2 to 5 cloves Garlic, minced, depending on your preference
  • Onion, diced 1 medium
  • Celery, diced 2 ribs
  • Butter, divided 6 Tbsp
  • Chicken stock 2 cups
  • Thyme, minced 2 tsp
  • Parsley, chopped 1 Tbsp
  • Fresh Sage, chopped 2 Tbsp
  • Salt and Pepper to taste

  • Fresh pomegranate seeds, or just pomegranate juice, no sugars added
  • 2 cups
  • Rice vinegar 1 ½ cups
  • Granulated sugar 1 ½ cups
  • Cinnamon ½ stick
  • Anise 1 star pod
  • Allspice 4 berries
  • Juice and zest of one orange
