Ukrainian Borscht Recipe (Beet Soup)
Ingredients
  • 12 c low sodium beef or vegetable broth or stock
  • 5 c green or red cabbage, thinly sliced
  • 1 large onion, chopped
  • 3 medium carrots, sliced in small rounds (larger rounds in half moons)
  • 2 T olive oil
  • 3 large beets, peeled and cut into matchsticks
  • 4 large potatoes, peeled and cut into ½“ cubes
  • 6 oz can tomato paste
  • 2 t salt
  • 3 bay leaves
  • 1 T white vinegar
  • Pinch of sugar or maple syrup
  • 3 large garlic cloves, finely chopped or grated
  • Ground black pepper to taste
  • ¼ c dill or parsley, finely chopped
  • Yogurt sour cream and rye bread, for serving
