Copycat bacon egg cheese

Ingredients
  • 1 silicone muffin top pan
  • 6 large eggs
  • 3 pieces of American cheese, split in half
  • 6 pieces of Canadian bacon
  • 3 to 6 English muffins, toasted (however sandwiches you’re making)
Steps
  1. Preheat the oven to 350°
  2. Break eggs into a 4 cup measuring
  3. Beat the eggs until fully combined
  4. Season with salt and pepper to taste
  5. Mix to combine
  6. Spray the muffin tops lightly with nonstick spray
  7. Place muffin top pan on a ¼ sheet pan
  8. Pour the egg mixture evenly into each cup
  9. Bake for 13 minutes
  10. subheading: While the eggs are baking, place a paper towel on a paper plate:
  11. Put 6 pieces of bacon on paper towel
  12. Place a piece of American cheese on top of each piece of bacon
  13. Zap for 30 seconds
  14. subheading: When eggs are done baking, make the sandwiches:
  15. Lower part of muffin
  16. Egg
  17. Bacon and Cheese
  18. Top of muffin
Notes
  • If eggs aren’t completely baked, take out of cups and place on a plate…zap for 30 seconds
  • Leftover eggs can be refrigerated or frozen
