Rose Barenbaum Open-Faced Apple Pie
Ingredients
  • Flaky cream cheese pie crust for a 9-inch lattice pie
  • ½ egg white, lightly beaten (1 tablespoon)
  • 2 ½ pounds baking apples (about 6 medium), peeled, cored, and sliced ⅛ inch thick (8 cups sliced)
  • 1 tablespoon freshly squeezed lemon juice
  • ¼ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • ½ to 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg, preferably freshly grated
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 tablespoon plus 1 teaspoon cornstarch
  • 1 large egg, lightly beaten (3 tablespoons)
  • ¼ cup apricot preserves
  • A 9-inch pie pan
  • A rose leaf cutter (optional)
