Cheesy Potato and Lentil Pie
Ingredients
  • 300 g ready-rolled shortcrust pastry (enough to line a 9-inch round tin or dish)
  • 130 g dried red lentils (~ ⅔ cup)
  • Vegetable stock or water, for boiling
  • 2 medium carrots, grated
  • 50 g frozen peas (~ ⅓ cup)
  • 60 g frozen sweetcorn kernels (~ ½ cup)
  • ½ teaspoon dried thyme or oregano
  • 1 teaspoon dijon mustard
  • Black pepper
  • 1 egg
  • 125 g cheddar cheese, grated (~ 1 ⅓ cups when grated)
  • 3 Cornish new potatoes, thinly sliced
