  • 1 big bunch lightly packed fresh cilantro, mostly leaves but small stems are ok (about 2 cups)
  • 2 medium jalapeños or other pepper, seeds and membranes removed but reserved, roughly chopped
  • 2 cloves garlic, roughly chopped
  • 30g grated Cotija or Parmesan or feta cheese
  • 1 tablespoon lime juice
  • ¼ teaspoon fine sea salt

  • 2 teaspoons olive oil - vegetable oil is fine as well
  • 475ml basmati or long grain white rice
  • 4 cloves fresh garlic - mashed or minced
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 820ml water or broth
