German Chocolate Mini Cakes
Ingredients

  • ½ teaspoon salt
  • 2 teaspoons espresso powder
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla extract
  • 2 cups King Arthur Unbleached All-Purpose Flour
  • ¾ cup Dutch-process cocoa
  • 4 large eggs
  • 1 ½ cups cool water
  • note: If you use salted butter, reduce the salt in the recipe to ¼ teaspoon.

  • 1 cup semisweet chocolate chips
  • ½ cup heavy cream
  • subheading: TOPPING:
  • 3/8 cup (5 tablespoons 1 teaspoon) unsalted butter
  • ¼ teaspoon salt
  • ¼ cup half & half or milk
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon pecan flavor or Pralines and Cream Flavor, optional
  • 1 cup shredded or flaked coconut, sweetened or unsweetened, toasted (See "tips", below.)
  • 1 cup chopped pecans, toasted (See "tips", below.)
