Natalie's Quiche Recipe
Ingredients
  • subheading: Crust:
  • 1½ cups flour
  • 8 tablespoons butter
  • 7 tablespoons ice water
  • subheading: Filling:
  • 2 cups vegetables (spinach, broccoli, kale)
  • 1 small onion, chopped
  • 2 to 3 cups grated cheese
  • 3 eggs
  • 1 cup cream
  • ground pepper
Steps
  1. Measure flour into a bowl. Cut in butter until it is the size of small peas. Add water and mix until just incorporated. Flatten into a disk, wrap in plastic wrap, and refrigerate or freeze.
  2. Preheat oven to 375°F. Roll out dough and place into a buttered quiche pan or pie pan (times based on a ceramic pie pan). Chill 1 hour or more before baking. Put foil around the edge of crust and bake 10 minutes. Cool before filling.

  4. Cook vegetables and drain excess water. (Squeeze water out of spinach if you steam it.) Sauté onion, then mix off heat with cheese, eggs, cream, and pepper if using. Pour into crust -- leave the foil on the crust's edges -- bake 35 minutes at 375°F. Serve warm or chilled.
