Smoky Chicken Pasta with Cream Sauce - use with leftover smoked chicken
Best fresh - not as good as leftovers
Ingredients
  • 1 pound cooked penne pasta
  • 1 pound chicken breast tenderloins pounded thin (used quart bag of frozen shredded smoked chicken)
  • 6 slices bacon (used precooked real bacon bits)
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1 tablespoon sugar (used allulose)
  • 1½ tablespoons smoked paprika
  • ½ teaspoon cayenne pepper
  • 1 to 2 clove garlic
  • ¼ cup minced onion
  • 1¼ cups chicken broth divided
  • 1 cup heavy cream (used fat free half and half)
  • 1 cup whole milk (used fat free half and half)
  • 2 tablespoons flour (used almond flour for less carbs)
  • 1 cup grated Parmesan (used mix of parmesan and mozz)
  • Added: frozen basil - 1 TBl or so and ½ cup roasted cherry tomatoes

  • 3.5 oz light cream cheese stir into sauce
  • ⅔ cup corn
  • 1.5 cups Spinach fresh or less frozen
  • More shredded parmesan and chopped parsley or basil to serve
