  • 14.5 ounce canned diced tomatoes with juices
  • 2 carrots peeled and sliced
  • 1 stalk celery sliced
  • 1 cup red bell pepper chopped
  • 1 cup tomato sauce
  • 1 ½ teaspoons dried Italian seasoning
  • 1 cup zucchini cut into moons
  • 1 cup medium pasta uncooked, penne, rotini or shells
  • 1 cup packed fresh spinach
  • parsley & Parmesan cheese as garnish, if desired.
