Banana Cream Pie

I am a Christ loving Grandma who has been following a low carb lifestyle for many years. I am a type II diabetic and a major foodie, which sometimes can be polar opposites! Banana cream pie is a classic for a reason. With a buttery crust, creamy vanilla custard, sliced bananas and clouds of whipped cream, it's what dessert dreams are made of.

Dough for single-crust pie

1 cup sugar

¼ cup cornstarch

½ teaspoon salt

3 cups 2% milk

2 large eggs, lightly beaten

3 tablespoons butter

1-½ teaspoons vanilla extract

2 large firm bananas

1 cup heavy whipping cream, whipped
