Easy Chicken Biryani
Ingredients
  • 3 large skinless, boneless chicken breasts , cut into bite-sized pieces (or use thighs for more flavor)
  • ¾ cup whole plain yogurt
  • 4 ½ tablespoons quality curry powder

  • ⅓ teaspoon cinnamon
  • 4 tablespoons butter
  • 1 medium yellow onion , chopped
  • 1 ½ tablespoon minced garlic
  • 1 ½ tablespoon minced fresh ginger root
  • 1 ½ teaspoon salt
  • ⅓ cup chicken broth
  • 3 tablespoons fresh chopped cilantro
  • 3 to 4 tablespoons raisins
  • 3 cups cooked basmati rice (~1¼ uncooked rice) (parboiled, i.e. only three-fourths cooked, slightly "al dente", see instructions below)
  • Chopped cilantro and sliced almonds for garnish
