Low sodium version of a restaurant favorite

Ingredients
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 onion, diced
  • 2 (15 ounce) cans no salt pinto beans
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • "no salt" to taste
  • Splash of lime juice
Steps
  1. Heat butter in a skillet over medium heat.
  2. Add garlic cloves to butter, until brown and fragrant, 3 to 4 minutes.
  3. Add diced onion, cooking through until soft and translucent, 4 to 5 minutes.
  4. Stir pinto beans, cumin, chili powder, and "no salt" into skillet and cook until beans are thoroughly heated, about 5 minutes. Stir occasionally.
  5. It will seem really runny, but the liquid is going to cook off and be absorbed by the beans, don't worry
  6. Smash bean mixture with a potato masher to desired texture. Splash lime juice over smashed beans and stir until combined.
Notes
  • If serving as a side, and not as an ingredient in a taco or burrito, serve warm, topped with a fiesta blend cheese on top
