Shrimp Mango Ceviche
Ingredients
  • 1 lb of cooked shrimp diced (I cut off tails and cut in 3 pieces)
  • 1 ripe avocado
  • Mango diced
  • 1 clove garlic minced
  • 1 jalapeño no seeds (anna said 1 tsp)
  • Diced Vidalia (or sweet) onion (2 TBSP)
  • Chopped cilantro (use to your liking)
  • Fresh lime juice (one if it is juicy)
  • Olive oil (1 to 2 TBSP)
  • Salt and pepper
Steps
  1. Let marinate overnight.
  2. Put in avocado just before serving.
