Baked Chicken "B"LT Wraps
The B stands for Bok Choy! (R1 approved) Prep Time: 10min Cook Time: 30min

Ingredients
  • 1 tbsp Healthy Fat Oil (grapeseed, coconut or avocado oil)
  • 2 cups of sliced tomatoes
  • 2 cups Bok Choy (not chopped)
  • 4 Romaine Lettuce Leafs
  • 2 tsp paprika
  • 1 tsp of Turmeric
  • Salt and Pepper
  • 20 oz of Chicken
  • 1 tbsp Apple Cider Vinegar
Steps
  1. Pre-Heat your oven to 350 degrees
  2. Salt and pepper your chicken and season with 1 tsp of Paprika and Turmeric
  3. Place Chicken on baking sheet add your 1 tbsp of oil and apple cider vinegar over the chicken Cover with Aluminum Foil and poke holes in the foil. Place in oven and allow to bake for 30min
  4. With your Bok Choy season with salt and pepper and the remaining 1 tsp of paprika and place on a grill on low setting (this gives the bok choy a kind of bacon smokey flavor). Cooked until a little chard
  5. Once your Chicken is done baking you can slice the chicken to go in your Lettuce Wrap. Slice your grilled Bok Choy and tomatoes and place in your lettuce wraps and Enjoy!

  • This is a great make the night before and bring for lunch option! Very easy to prep and not a lot of clean up
