Spicy Beetroot, Leek & Walnut Salad
Ingredients
  • 4 beetroot
  • 1 teaspoon ground cumin
  • 1 tablespoon coconut oil duck fat, tallow or other good quality fat melted
  • sea salt Himalayan salt
  • freshly ground black pepper
  • 4 small leeks white part only, cut into 10 cm segments
  • 1 handful coriander roughly chopped
  • 1 small handfull mint
  • 1 small handfull flat-leaf parsley
  • 1 small handfull dill
  • 2 large handful rocket
  • 2 tablespoons sunflower seeds toasted
  • 50 g pomegranate seeds (optional)
  • subheading: Dressing:
  • 100 g walnuts roughly chopped
  • 1 garlic cloves finely chopped
  • ¼ teaspoon dried chilli flakes
  • 3 tablespoons raw apple cider vinegar
  • ½ teaspoon walnut oil
  • 2 ½ tablespoons extra virgin olive oil
