Water Chestnut & Mizuna Salad

Ingredients
  • 1 lb fresh water chestnuts, thinly sliced
  • 8 c mizuna (水菜), tatsoi (tat choy) or baby spinach
  •  
  • 2 tbs rice vinegar
  • 2 tsp minced fresh ginger
  • 1 tsp soy sauce
  • Freshly ground pepper
  •  
  • 3 tbs neutral oil
  • 1 tbs toasted sesame oil
Steps
  1. Whisk vinegar, ginger, soy sauce, and pepper
  2. Whisk in oils
  3. Toss
