Spinach Bake

Ingredients
  • 10 ounce pkg frozen chopped spinach - thawed and drained
  • 1 cup cooked rice
  • 1 cup shredded sharp cheddar cheese
  • 2 eggs (beaten)
  • 2 Tablespoons butter, softened
  • ⅓ cup milk
  • 2 Tablespoons chopped onion
  • ½ tsp salt
Steps
  1. Preheat oven to 350 degrees
  2. Thaw and drain spinach
  3. Mix with remaining ingredients
  4. Bake in 8 x 8 square pan for 30 minutes or until knife inserted in center comes out clean
  5. Cut into squares and serve
Notes
  • Do ahead tip - make night before and reheat in microwave
