Homemade Yeasted Belgian Waffles
These are Belgian waffles leavened with yeast that are crispy on the outside and light and fluffy on the inside.

FYI: Preparing the batter the night before not only increases the flavor in the waffles, it also means that making waffles for breakfast the next day is nice and easy since the work of preparing the batter has been done the night before.
Ingredients

  • 1¾ cup of warm milk (105 to 110° F)
  • 8 Tbsp unsalted butter (1 stick), cubed
  • 1½ tsp instant/rapid-rise dry yeast (can also use regular active-dry yeast, but requires at least 12 hours for batter to rise)

  • 2½ cups AP flour
  • 8 Tbsp granulated sugar (use less, if desired)
  • 1 Tsp Kosher salt

  • 2 large egg yolks (room temp)
  • 2 Tsp vanilla extract

  • 2 large egg whites (whipped to soft peaks)
