Ingredients
  • Frylite
  • Punnet cherry tomatoes
  • 1 red onion, chopped
  • 2 sm carrots, chopped up small
  • ½ pepper, sliced small
  • Chopped garlic
  • 1tbl Italian herbs
  • ½ carton passata
  • 2 eggs
  • 23g smoked protein cheese
  • 2 slices warburton wholemeal bread
Steps
  1. I cooked it in my skillet on med/high heat. Heat up pan, spray pan. Add chopped onions, cook till transparent, add garlic, herbs, carrots and peppers, cook for a few more mins., then add tomatoes and passatta. Cook on med for 20mins. Then make 2 wells to put the eggs in, cook for 8 to 10mins, with the lid on, then sprinkle cheese on top. Put a lid on the pan, toast the bread. When toast is done. Serve on the toast. There was some tomato and veg left.
