Ingredients
  • 3 cups almond flour (see notes for nut-free)
  • ½ cup tapioca flour
  • ½ cup unflavored collagen or protein powder
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • ¼ teaspoon salt
  • 1 ½ cups canned pureed pumpkin
  • ½ cup pure maple syrup
  • ¼ cup extra light tasting olive oil or avocado oil can sub melted coconut oil
  • 2 large eggs
  • Optional add-in: ½ cup dairy-free chocolate chips
