Wisconsin Butter Burger
Ingredients
  • 8 tablespoons ( 114 g) unsalted butter, softened
  • 2 teaspoons reduced sodium soy sauce
  • 1 pound ( 454 g) beef sirloin, trimmed of gristle and cut into ½-inch cubes (see notes)
  • 1 medium yellow onion (8 ounces; 227 g), diced
  • 1 tablespoon ( 15 ml) water
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tablespoon lemon juice, from about ½ lemon
  • 1 teaspoon neutral oil, such as canola or vegetable oil
  • 4 roll potato rolls
