Ingredients
  • Salmon Rub
  • ½ tablespoon avocado oil, or any neutral cooking oil
  • 1 tablespoon grated ginger
  • 2 garlic cloves, minced
  • 1 teaspoon brown sugar
  • 2 tablespoons red curry paste
  • ½ teaspoon kosher salt
  •  
  • Curry Sauce

  • 1 14 oz can light coconut milk
  • 1 tablespoon fish sauce, or soy sauce
  • 1 teaspoon brown sugar
  • 1 small sweet onion, or yellow onion, sliced
  • 1 ½ bell peppers, sliced (I like to use one green and one red/yellow/orange)
  • 3 scallions, thinly sliced, white part separated
  • 1 lime, juiced
  • 2 tablespoons chopped Thai basil
  • 2 tablespoons finely chopped cilantro
  • 4 4-ounce salmon fillets, skin removed
