  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 8 cups beef stock
  • 2 teaspoons beef bouillon
  • 4 small yukon gold potatoes, quartered or 2 russet potatoes, peeled and cut in 1-inch pieces
  • ½ pound green beans, trimmed, cut into 2-inch pieces
  • ¼ cup finely chopped flat leaf parsley, for serving
