Lemongrass Shredded Mushroom Bao Buns
Ingredients

  • 3 lemongrass stalks, minced
  • 2 shallots, minced
  • 2 garlic cloves, minced
  • 2 Thai chili pepper, minced
  • 1 tbsp soy sauce
  • 1 tbsp black pepper
  • 1 tbsp salt
  • 1 tbsp coriander
  • 1 tsp white vinegar
  • subheading: Pickled Daikon and Carrots (Do Chua):
  • 1 carrot, julienned
  • 1 palm sized daikon, julienned
  • 2 tbsp salt
  • ¼ cup sugar
  • ½ cup distilled white vinegar
  • ½ cup water
  • subheading: Topping:
  • 1 cilantro sprig, roughly chopped
  • 1 tbsp pickled daikon and carrots
  • ½ english cucumber, julienned
