English Bread Muffin
Ingredients
  • 2 ½ cups milk
  • 2 tbs cornmeal
  • 5 cups flour
  • 2 (¼ oz) pkgs active dry yeast
  • 1 tbs sugar
  • 2 tsp salt
  • ¼ tsp baking soda
Steps
  1. Lightly grease 2 loaf pans and sprinkle with cornmeal
  2. Warm the milk in a small saucepan until very warm (125°)
  3. In a large bowl, mix together 2 cups flour, yeast, sugar, salt and soda
  4. Stir milk into flour mixture; beat well
  5. Stir in remaining flour, 1 cup at a time until stiff batter is formed
  6. Spoon into prepared pans
  7. Cover and let rise in a warm place until nearly doubled in size..about 45 min
  8. Meanwhile preheat oven to 375°
  9. Bake in preheated oven until golden brown, about 35 min
  10. Remove from pans immediately and cool
