Ingredients
  • 3 medium eggplants OR 2 large
  • Kosher Salt
  • 4 large eggs

  • 1 ½ C. grated Parmesan cheese

  • 1 teaspoon of onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon of pepper
  • 2 tablespoons of olive oil
  • 2 C. marinara sauce
  • 2 C. mozzarella cheese
  • Fresh basil or parsley (for garnish)
