Ghost Hand Pies with Honey Dijon
Ingredients
  • 2 tablespoons unsalted butter
  • 2 medium onions, thinly sliced
  • Kosher salt and freshly ground black pepper
  • 1 ½ pounds pie dough (homemade is best, but store-bought will work too), recipe follows
  • All-purpose flour, for dusting
  • 4 ounces sharp Cheddar, shredded
  • 1 large egg, lightly beaten with a splash of water (for the egg wash)
  • ¾ cup Dijon mustard
  • 2 tablespoons honey
  • subheading: Pie Dough:
  • 1 tablespoon apple cider vinegar
  • 2 ½ cups all-purpose flour, plus more for dusting
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt
  • 1 cup (2 sticks) cold unsalted butter, cubed
